Heavenly Frosting Fluff
We were at a family gathering when my sister-in-law walked in with a cupcake stand and all the confections to fill it. They were as charming as cupcakes should be…..piled high with frosting and decorated with little fondant ornaments. So fun to look at, but not a temptation for me because of the abundance of frosting. No siree, I was not interested. Then the following scenario ocurred.
My Dad finished his meal and surveyed his cupcake doubtfully. After a moment he picked up his fork, scooped the frosting off of the top, and deposited it with finality onto his empty plate. As he absentmindedly licked his fork, the expression on his face suddenly changed. Fork still suspended, he froze, looked at the frosting pile with raised eyebrows, and proceeded to reapply it to his cupcake, which he then devoured with relish.
After my first bite, I had one thought and one thought only: how was I going to get my hands on a few more without looking desperate and gluttonous?! After awhile, even that went out the window. I was soon fighting my way through an ever-growing crowd, grasping hopefully for the remains.
I assure you, I’m not exaggerating! Everyone loves this! I’ve made cupcakes twice this week. Enjoy!
HEAVENLY FROSTING FLUFF
- YIELD: 24 Servings
- PREP: 10 mins
The name says it all. Fluffy and not too sweet. Absolutely divine! Unused portions should be kept in refrigerator (Ha! Like there’ll be unused portions! ).
- 8 ounces cream cheese softened
- 1 cup granulated sugar
- 1 teaspoon vanilla
- dash salt
- 1 1/2 cups whipping cream
- In a medium bowl, whip the cream (plain) on high speed with electric mixer until peaks form. Set aside.
- In another bowl, combine cream cheese, sugar, vanilla, and salt. Stir with a spoon until well blended and smooth.
- Fold cheese mixture into whipped cream and stir until completely blended. Enjoy!
